Spice-Nice Cake Squares

Are you looking for something sweet with no sugar or salt added, something healthy, completely NUT FREE and calorie friendly?  Are you looking for something that kids will eat up and is also a great treat with a cup of coffee or tea?  Spice-Nice cake is a great snack or dessert that you can easily make for you and the family.

In addition to the aromatic notes of cinnamon and allspice, Honey or Maple syrup is the essential ingredient that you pick as the main flavor.  You can even add them both (in proportion) and you will enjoy a bold sweetness that is not over the top.  Did you know that pure maple syrup has no fat and is a good source of 3 essential elements: calcium, iron and thiamine?  There is a whole lot of spice and niceness in this cake 🙂

My family has tried all combinations and each version tastes very good and equally moist.

As a mom of a picky preschooler, Spice-Nice cake helps us on days when we need an ‘on the go’ breakfast or it can serve as a school snack because it is nut free.  Banana and apple sauce are added, so if your kids need more fruit than this cake makes it easier to eat some fruit.  Plus, these fruits add a natural sweetness…how nice is that!  If you and your family loves bananas (as much as we do), check out another family recipe for BaNilla Muffins.

Need something for a ladies lunch or dinner at a friend’s house? Spice-Nice Cake is a great dessert to make in a large or mini loaf pan.  You can even preserve the freshness by wrapping a loaf in saran wrap/aluminum foil and freezing it for when an unexpected guest comes knocking on your door.  It is also extremely yummy around the holidays.



Cooking Spray

1 1/2 cups all-purpose flour

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/8 teaspoon table or kosher salt (Optional; You won’t miss it!)

1 teaspoon ground cinnamon

¾ teaspoon ground allspice

2 large eggs

2 tablespoons canola oil

1/2 cup honey (light or dark) or 1/2 cup 100% pure maple syrup (U.S. Grade A Dark Amber)  or 1/4 cup honey and 1/4 cup pure maple syrup

3 bananas, very ripe and mashed (organic preferred)

1/4 cup applesauce (organic preferred)

1 tablespoon lemon juice



  1. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon and allspice.  Set aside.
  2. In a mixer or another large bowl, beat eggs, add canola oil and honey (or maple syrup, or the honey/maple syrup combination).  Then add the mashed bananas, applesauce and lemon juice and mix it up.
  3. Add the flour mixture you set aside into the egg mixture and mix thoroughly.
  4. Preheat Oven to 350 degrees.
  5. Spray a 9 inch loaf pan with PAM olive oil.
  6. Pour the batter in to a loaf pan.
  7. Bake in the oven for about 50 minutes.
  8. Put a toothpick in the center of the loaf to make sure the batter is cooked at 50 minutes; if not cook for another 5 minutes and then take out of oven.
  9. Let cool for about 20 minutes.
  10. Cut in to 12 slices, or 24 squares!

Note: if you are baking in the mini loaf pans, check them in 25 minutes by inserting a toothpick.  It may need to bake another 5 minutes at that point depending on your oven.
